Well, another weekend has come and gone. *waaaaaaaah*
It sure was a great one. Saturday we ran errands, including a trip to our local nursery for our tomato and pepper plants. The nursery is called Down to Earth and it is absolutely amazing. Just incredible. Not only is the place itself gorgeous, their prices rock too! This year’s plants should be awesome!

We also did a Costco stock up run, stocking up on meat and basics. Which led to this weekend’s recipes – links to each recipe are included. Be warned, food porn follows!!!
I served those burgers on a whole wheat bun with lettuce and tomato. Delish! On the side, I made up a recipe of roasted tomato slices after not loving all the ones I found online. I just sliced up some red tomatoes (about 1.5 tomatoes), laid them in a baking dish, and sprinkled them with salt, pepper, about 1/3 cup of parmesan cheese and some dried oregano. Roasted them at 450 for about 15 minutes. Delicious and juicy and very healthy since no oil was involved!
You just can’t go wrong with a Bon Appetit recipe, I swear. This one was ridiculously easy. The sweet marinade for the steak was perfectly balanced with the salty tapenade And I served it with this Balsamic Parmesan Roasted Cauliflower on the side. Delicious!
Quite a tasty little weekend!
I intended to put a pork shoulder in the crockpot last night with just salt, pepper, and liquid smoke and make a Kalua Pork, but forgot to do that. So, instead, today I threw about 3.5 lbs of pork shoulder into the crockpot, rubbed it with salt, pepper, and garlic powder, and poured in 2 bottles of Guinness. I’ll shred that up tonight and use some of it for these BBQ Pork Taquitos. I can’t wait for dinner, mainly so my house stops smelling like meat and Guinness – torture!
